When you really want to indulge in some sweets, this is the recipe that you want. Here’s what I used in my cookies. The complete measurements are in the printable recipe at the bottom of this post.

  • Heavy Cream
  • Pecans – save yourself time and buy a bag of chopped pecans. They need to be chopped for this recipe.
  • Dark Baking Chips – Lily’s is my favorite brand. Their chocolate chips have the perfect flavor and are sugar-free.
  • Sugar-free sweetener – I used Swerve granular sweetener, it has the best texture for the cookies.

Why is my cookie dough not setting? ›

If you think your cookie dough is off, you may not have enough liquid in the recipe. Consider adding a touch more liquid such as melted butter, egg yolks, or a teaspoon of water. Add a teeny bit and see if that helps. Add more as needed until the dough holds together and is scoop-able.

Why didn't my cookies hold their shape? ›

Mixing Butter & Sugar

If your butter is under mixed, it won't have the air pockets to hold it's shape. If it's over-mixed, the air pockets decrease in size and are unable to hold their shape in the oven—causing your cookies to spread. It's best to cream butter and sugar on medium speed for 2 to 3 minutes.
